Job Description:
As Executive Sous Chef, you will serve as the right hand to the Head Chef, ensuring seamless kitchen operations and integrating the best practices you have learnt during your career.
The Executive Sous Chef will lead the kitchen from the main pass, guiding the team through busy services, ensuring every dish meets our high standards.
Responsibilities:
- Assist with wastage, GP & Labour controls.
- Assist in scheduling, staffing, and performance management of kitchen personnel.
- Ensure that every dish is prepared and executed to the highest standards.
- Ensuring correct prep levels by our dedicated prep team.
- Ensuring deliveries and stock are put away correctly by the Goods Receiver.
- Precise ordering to ensure full menu availability and minimum wastage.
- Lead the team through positive and constructive methods.
- Daily due diligence.
- Looking after staff wellbeing.
- Ensure compliance with health and safety regulations.
- Train and mentor kitchen staff to maintain high food standards.
- Pioneer a positive work environment and foster teamwork.
Requirements:
- Previous experience as an Executive Sous Chef or similar role in a busy kitchen environment.
- Strong culinary skills and a passion for quality.
- Leadership abilities with excellent communication and interpersonal skills.
- Strong understanding of EBITDA & GP.
- Understanding P&Ls to make positive cuts, increasing overall profit.
- Ability to thrive in a fast-paced, high-pressure environment.
- Experience in leading a large kitchen team.
