The Sales Manager is responsible for driving private dining sales across The Ivy Collection restaurants in the UK. This role focuses on maximising revenue opportunities, optimising private dining space, and converting enquiries into confirmed bookings. The Sales Manager will play a key role in achieving weekly, monthly, and annual sales targets while delivering exceptional client experiences that foster repeat business.
Key Responsibilities:
Sales Conversion & Revenue Growth
- Manage and convert all private dining enquiries across The Ivy Collection venues via phone, email, direct referrals, and The Ivy enquiry platforms.
- Implement effective sales strategies to achieve and exceed the company’s conversion rate targets.
- Negotiate effectively to secure the best possible outcome for both the client and the business.
- Proactively cross-sell across the wider Caprice Holdings portfolio to maximise sales potential.
Client Relationship Management
- Build and maintain strong relationships with clients, ensuring a seamless and personalised booking experience.
- Deliver timely and professional follow-ups to all enquiries.
- Encourage repeat business by nurturing long-term client relationships and anticipating client needs.
Operational Excellence
- Prepare accurate proposals, contracts, and deposit requests via Ivvy, ensuring all documentation is clear and complete.
- Manage the enquiry diary and ensure all events are properly tracked and updated.
- Ensure efficient handovers to the Event Planning team once contracts are signed and deposits are secured, including second deposit reminders and allocation of planning tasks.
Collaboration & Networking
- Work closely with restaurant management teams to maximise revenue opportunities and optimise the use of private dining spaces.
- Partner with the Senior Sales Manager and Head of Sales & Events to explore new business opportunities and represent The Ivy Collection at industry networking events.
- Provide feedback on market trends, client demands, and competitor activity to inform sales strategies.
Skills & Experience
- Proven experience in hospitality sales, preferably within private dining, events, or luxury venues.
- Strong negotiation and communication skills with a client-focused approach.
- Highly organised with excellent attention to detail and the ability to manage multiple enquiries simultaneously.
- Proficiency in CRM/event management systems (experience with Ivvy preferred).
- Ability to work under pressure in a fast-paced, target-driven environment.
